Last week, my fiancé, Nathan realised he probably couldn’t live on curry alone. He had an old school friend stay over, who now works in an Indian restaurant, and who had paid for his keep in curry! I have to admit for the first few days it was amazing, but a week later our stomachs were crying out for good stodgy food, preferably wrapped in pastry and containing lots of carbs. Yummy cottage pie à la Lambert
This is a great recipe during a cold weekend, when you need some cosy home cooking to keep you nice and toasty.
I can’t take the credit for this – this is Lambert’s recipe, but I can certainly vouch for it. It is absolutely scrummy. The best bit about this recipe? It’s a great dish to turn to when you need to cook up vegetables before they go off. Lambert chose to create the layer of mash with potatoes, as well as sweet potatoes and carrots. He also added some spring onions, which I thought added a great bit of flavour and texture.

I made these sweet little gems for Christmas a couple of years ago and they went down really well with my family. The filling tastes amazing and the recipe isn’t complicated – so you actually enjoy making them! They taste amazing and look really pretty on a plate.
